Lime Lovers Shrimp and Avocado Salad
I love everything about this recipe! Fresh, easy and healthy. I made this on Tuesday and enjoyed it again for lunch on Wednesday. It will definitely be making an appearance again soon, and would be perfect for a summer BBQ. Enjoy!Makes 4 servings.
- 1 lb of cooked shrimp
- 1 avocado
- 2 limes, juiced
- 1 medium tomato, diced
- 1 red pepper, diced
- 1/2 red onion, diced
- 1/4 cup of cilantro, chopped
- 1 tsp of olive oil
- 1/2 tsp of salt
- 1/2 tsp of hot sauce (optional)
