Cilantro Lime Black Bean Salad

Summer is the perfect season for bean salads.  These "one bowl" wonders can pack a Cilantro lime black bean saladnutritional punch (high is protein, complex carbs and fiber) but can also make for a quick, convenient and satisfying meal!Try this salad on its own, or in a wrap for a tasty lunch.Ingredients: Makes 4 servings

  • 1.5 cups of cooked black beans (about 1 small can)
  • 1 large handful of fresh cilantro, chopped
  • 1 avocado, diced into cubes
  • 1 cup of diced tomato
  • 1/2 cup of corn niblets
  • 1/2 cup of diced cucumber
  • 1/2 cup of diced pepper
  • 1 lime
  • 1 clove of garlic
  • 1 tsp of olive oil
