Easy-Peasy Garlic Scape Pesto

I feel like my summer is punctuated by a series of seasonal food checkpoints, and garlic scapes are at the top of my list! These curly tops emerge in early summer and have all kinds of uses. But my all-time favourite is making garlic scape pesto.  When I'm lucky, I get enough in our Snowy River CSA to make a fill a few mason jars. :) Head down to your farmer's market and pick up a few bunches of scapes.  Then run home and throw this together! You can use it as a straight-up pesto, thicken to serve as a dip, or thin with vinegar to use as a salad dressing!Enjoy!

  • 1 cup of diced garlic scapes
  • 1/4 cup of pine nuts or hemp hearts
  • 1/2 cup of olive oil
  • 1 tsp of salt
  • 1/2 tsp of pepper
  • Juice AND rind of 1 lemon
  • 1/4 cup of fresh parmesan
