Summer Salsa

Our CSA from Snowy River Farms is always very generous with hot peppers, so this year I decided to make a spicy summer salsa.  Not only is it the perfect dip, but it would also be a great base for a bean salad.  Add a cup of beans, corn and fresh avocado and you've got a meal!Ingredients:

  • Summer Salsa6-8 large fresh tomatoes
  • 1 green pepper
  • 1 red pepper
  • 1 yellow pepper
  • 2-4 banana peppers
  • 1-2 jalapeño peppers or small green chillies
  • 1 small onion
  • 2 spring onions
  • 4-6 cloves of garlic
  • 2 limes, juiced
  • 1/2 tsp salt
  • 1/2 cup of diced fresh cilantro (or parsley)

Dice all veggies into small pieces, mix and let chillfor 1-2 hours before serving!
