Summer Salsa
Our CSA from Snowy River Farms is always very generous with hot peppers, so this year I decided to make a spicy summer salsa. Not only is it the perfect dip, but it would also be a great base for a bean salad. Add a cup of beans, corn and fresh avocado and you've got a meal!Ingredients:
- 6-8 large fresh tomatoes
- 1 green pepper
- 1 red pepper
- 1 yellow pepper
- 2-4 banana peppers
- 1-2 jalapeño peppers or small green chillies
- 1 small onion
- 2 spring onions
- 4-6 cloves of garlic
- 2 limes, juiced
- 1/2 tsp salt
- 1/2 cup of diced fresh cilantro (or parsley)
Dice all veggies into small pieces, mix and let chillfor 1-2 hours before serving!
