Love your leafy greens!
It shouldn't be news that leafy green vegetables are good for you. But, many patients tell me that they are intimidated by leafy greens other than spinach and lettuce. So, what other greens are out there? Here's a few of my favourites:
- Swiss Chard
- Beet Greens
- Collards
- Kale
- Spinach
Now's the time to discover them as they are in season and easily found. Select Nova Scotia has a great chart which highlights what's in season and locally available. As you can see, we've got lots to choose from!I recently got a lovely bunch of colourful swiss chard in my CSA bag from Snowy River Farms. Here's what I whipped up in less than 10 minutes. Most greens can be lightly steamed to perfection, while others (like kale) need a bit more time and moisture.1 bunch of swiss chard1 tsp each of olive and sesame oil1 tbsp each of sliced almonds, pine nuts, pecans and sesame seeds.Lightly saute swiss chard in olive oil for 5-7 mins, or until slightly wilted. Toss sliced almonds, pine nuts and pecans. Drizzle with sesame oil and sesame seeds. Serve and enjoy!
